8 oz pasta (penne, rotini, or your favorite type)
2 ripe avocados, peeled and pitted
1 tablespoon lime juice (or lemon juice)
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste
1/4 cup fresh cilantro, chopped (optional)
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 red onion, thinly sliced
1/4 cup corn kernels (fresh, frozen, or canned)
1/4 cup bell pepper, diced

Instructions:
Cook the Pasta:
Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool it down quickly. Set aside.
