Avocado Salsa

- 2 avocados, diced
- 1 Roma tomato, diced
- 8 ounces pineapple chunks, drained and chopped
- 1/4 red onion, diced small

- 2 tablespoons cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon kosher salt (or half if using table salt)
- 1/4 teaspoon black pepper
Instructions:
1. Dice the avocados, Roma tomato, red onion, and jalapeno. Chop the cilantro and drain and chop the pineapple chunks.
2. In a medium-sized mixing bowl, add the diced avocados, tomato, pineapple, red onion, jalapeno, and cilantro.
3. Add the lime juice, kosher salt, and black pepper to the bowl. Gently toss the ingredients together to combine, being careful not to mash the avocados too much.
