This Bacon-Wrapped Stuffed Mozzarella Meatloaf is the ultimate comfort food upgrade. For the Meatloaf
2 lbs ground beef (80/20 for best flavor and juiciness)
1 cup shredded mozzarella or mozzarella cut into thick strips
1 large egg
½ cup breadcrumbs
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
8–10 slices bacon
For the Glaze
½ cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil for easy cleanup.
In a large mixing bowl, combine the ground beef, egg, breadcrumbs, minced garlic, Italian seasoning, salt, and black pepper. Mix gently with your hands just until combined—avoid overmixing, as this can make the meatloaf dense.
Transfer the meat mixture onto parchment paper and shape it into a rectangle about 1 inch thick. Arrange the mozzarella in a line down the center, leaving space at the edges. Carefully roll the meat mixture over the cheese, sealing the edges tightly to prevent leaks during baking. Shape into a smooth loaf.
Lay the bacon slices across the top, slightly overlapping, and tuck the ends underneath the loaf.
In a small bowl, whisk together ketchup, Worcestershire sauce, and brown sugar. Brush half of the glaze evenly over the bacon-wrapped loaf.
Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C). During the last 15 minutes, brush with the remaining glaze. For extra crispy bacon, broil for 2–3 minutes at the end.
Let the meatloaf rest for 10 minutes before slicing to keep the juices inside.
