Introduction:
Bahama Mama Ice Cream brings a tropical cocktail twist into a creamy dessert. This no-churn ice cream is bursting with the flavors of pineapple, coconut, banana, and a splash of rum extract, layered with maraschino cherries and crushed pineapple. Ingredients:
Base:
2 cups heavy whipping cream (chilled)
1 (14 oz) can sweetened condensed milk
1 tsp vanilla extract
1/2 tsp rum extract (or real rum if preferred)
1/4 tsp coconut extract (optional but recommended)
Tropical Flavors:
1 ripe banana, mashed
1/2 cup crushed pineapple, drained
1/3 cup maraschino cherries, chopped
1/4 cup shredded sweetened coconut (optional)

Instructions:
Whip the Cream (5 minutes):
In a large chilled bowl, beat the heavy whipping cream using an electric mixer until stiff peaks form. Set aside.
Mix Flavor Base (5 minutes):
In another large bowl, mix the sweetened condensed milk, vanilla, rum extract, coconut extract, and mashed banana until smooth.
Fold In Gently (3 minutes):
Gently fold the whipped cream into the condensed milk mixture using a spatula, being careful not to deflate the whipped cream.
Add the Tropical Mix-Ins (4 minutes):
Fold in the crushed pineapple, chopped cherries, and shredded coconut. Distribute evenly but do not overmix.
Transfer to Container (2 minutes):
Pour the mixture into a loaf pan or airtight freezer-safe container. Smooth the top.
Garnish and Freeze (6+ hours):
Add extra cherries or a swirl of cherry juice on top for visual flair. Cover tightly and freeze for at least 6 hours or overnight.
To Serve:
Let sit at room temperature for 5–10 minutes before scooping. Serve with fresh fruit, waffle cones, or enjoy it on its own!
