Introduction

If you love fries but want a healthier, oven-baked version, these Parmesan Potato Fries are perfect. Instead of deep-frying, the potatoes are coated in olive oil, garlic, Parmesan, and herbs, then roasted at high heat until golden and crisp. They’re a family-friendly side dish that pairs beautifully with burgers, roasted chicken, grilled fish, or simply as a snack with your favorite dipping sauce

Prep time: 15 minutes

Cook time: 30–35 minutes

Total time: 45–50 minutes

Servings: 4

Ingredients

4 medium russet potatoes (or Yukon gold for creamier fries)

3 tbsp olive oil

3 tbsp grated Parmesan cheese

1 tsp garlic powder (or 2 fresh garlic cloves, minced)

1 tsp paprika (optional, for smoky flavor)

½ tsp dried oregano (or Italian seasoning)

1 tsp salt (to taste)

½ tsp black pepper

2 tbsp fresh parsley, chopped (for garnish)

Extra Parmesan for topping (optional)

Instructions

Prepare the potatoes:

Wash and peel (optional) potatoes. Cut into even fries or wedges about ½-inch thick.

Place in a bowl of cold water and soak for 20–30 minutes to remove excess starch (this makes them crispier).

Drain and pat dry thoroughly with a clean towel.

Season:

Preheat oven to 425°F (220°C).

Line a large baking sheet with parchment paper and lightly grease with oil.

In a large bowl, toss potatoes with olive oil, Parmesan, garlic powder, paprika, oregano, salt, and pepper until evenly coated.

Bake:

Spread fries in a single layer on the baking sheet (avoid overcrowding for crispiness).

Bake for 15 minutes, then flip fries with a spatula.

Bake another 15–20 minutes, until golden brown and crispy.

Finish:

Sprinkle with extra Parmesan and fresh parsley while hot.

Serve immediately with ketchup, garlic aioli, or ranch dressing.

Tips & Variations

Extra Crispy Tip: Preheat the baking sheet in the oven before adding fries. The hot surface helps them crisp.

Cheese Swap: Try Pecorino Romano or Asiago instead of Parmesan.

Spicy Kick: Add chili powder, cayenne, or red pepper flakes.

Shortcut: Use pre-cut frozen fries, toss with Parmesan and seasoning, and bake per package directions.

Serving Suggestions

Serve alongside grilled chicken, steak, burgers, or as a snack platter with dips like marinara, chipotle mayo, or sour cream & chives.
