Ingredients
4 medium russet potatoes (or Yukon gold for creamier fries)
3 tbsp olive oil
3 tbsp grated Parmesan cheese
1 tsp garlic powder (or 2 fresh garlic cloves, minced)
1 tsp paprika (optional, for smoky flavor)
½ tsp dried oregano (or Italian seasoning)
1 tsp salt (to taste)
½ tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)

Instructions
Prepare the potatoes:
Wash and peel (optional) potatoes. Cut into even fries or wedges about ½-inch thick.
Place in a bowl of cold water and soak for 20–30 minutes to remove excess starch (this makes them crispier).
Drain and pat dry thoroughly with a clean towel.
Season:
Preheat oven to 425°F (220°C).
Line a large baking sheet with parchment paper and lightly grease with oil.
In a large bowl, toss potatoes with olive oil, Parmesan, garlic powder, paprika, oregano, salt, and pepper until evenly coated.
Bake:
Spread fries in a single layer on the baking sheet (avoid overcrowding for crispiness).
Bake for 15 minutes, then flip fries with a spatula.
Bake another 15–20 minutes, until golden brown and crispy.
Finish:
Sprinkle with extra Parmesan and fresh parsley while hot.
Serve immediately with ketchup, garlic aioli, or ranch dressing.
