Baked Potato Casserole (Air Fryer Recipe)
This cheesy, loaded potato bake is perfect as a hearty side dish or even a stand-alone main. It’s everything you love about a loaded baked potato… in casserole form!
Ingredients:
4 medium russet potatoes (about 2 lbs), peeled and diced
1 cup sour cream
1/2 cup milk
1 1/2 cups shredded cheddar cheese (divided)
4 slices cooked bacon, crumbled
2 green onions, finely sliced
Salt & pepper to taste
Optional: 1/2 tsp garlic powder or onion powder
Olive oil spray or butter for greasing
Instructions:
Pre-Cook the Potatoes (Quick Steam)
Microwave diced potatoes in a covered bowl with 2 tbsp water for 6–8 minutes, or until just fork-tender.
You can also steam or parboil them briefly if preferred.
Mix the Casserole:
In a large bowl, combine cooked potatoes, sour cream, milk, half of the cheddar, most of the bacon, green onions, and seasonings.
Gently mix until everything is well combined.
Assemble in Air Fryer-Safe Dish:
Lightly grease a baking dish or pan that fits in your air fryer basket.
Spoon in the potato mixture and smooth the top.
Sprinkle with remaining cheddar and bacon.
Air Fry It:
Preheat air fryer to 350°F (175°C).
Place the casserole dish in the basket and air fry for 12–15 minutes, until hot and bubbly and the top is golden brown.
Finish & Serve:
Let it rest for 5 minutes before serving.
Top with extra green onions, sour cream, or even hot sauce if you like a little kick.
