Banana Foster Pudding Recipe
This Banana Foster Pudding is a delightful dessert that combines the rich, creamy texture of a banana pudding with the caramelized sweetness of bananas foster. It’s the perfect treat for any occasion!
Ingredients:
For the Banana Pudding:
- 6 egg yolks
- 125 grams (about 2/3 cup) of sugar
- 1 teaspoon of vanilla extract
- 2 ripe bananas
- 1 liter (4 cups) of milk
- 3 tablespoons of cornstarch
- 20 milliliters (about 1 1/3 tablespoons) of milk
For the Bananas Foster:
- 10 grams (2 teaspoons) of butter
- 50 grams (about 1/4 cup) of sugar
- 1 banana (for caramelizing)
Preparation:
1. Prepare the Banana Pudding:
- Start by separating the egg yolks from the whites. Place the egg yolks in a large mixing bowl.
- Add sugar and vanilla extract to the egg yolks. Whisk everything together until the mixture is well blended and smooth.
- In a separate bowl, peel and mash the ripe bananas with a fork. You want them to be well-mashed, so they can incorporate smoothly into the mixture.
- Add the mashed bananas to the egg yolk mixture and mix thoroughly.
- Gradually pour the milk into the egg and banana mixture, whisking constantly to ensure the milk is fully incorporated.
- In a small bowl, combine the cornstarch with the 20 milliliters of milk. Stir until the cornstarch is completely dissolved, then add this mixture to the egg and banana mixture.
- Transfer the entire mixture into a pot over low heat. Stir constantly with a whisk to prevent the pudding from sticking to the bottom of the pot.
- Cook for about 10 minutes, or until the mixture thickens to a pudding-like consistency.
- Once thickened, pour the pudding into 4 small dessert cups and let them cool at room temperature. Once cooled, place them in the refrigerator to solidify, at least for 3 hours.
2. Prepare the Bananas Foster Topping:
- In a small pan, melt the butter over medium heat.
- Add the sugar and stir until it dissolves into the butter, creating a smooth caramel.
- Slice the banana into thin rounds and add them to the caramel. Stir to coat the banana slices evenly with the caramel.
- Cook for about 2-3 minutes, just until the banana slices soften and the caramel has thickened slightly.
3. Assemble the Dessert:
- Once the banana pudding has set and is firm, spoon the caramelized banana slices over the top of the pudding in each cup.
- Let the pudding and topping chill for another 30 minutes before serving.
