Total Time: 40 minutes
Ingredients:(Servings: 4)
For the cauliflower:
1 medium head of cauliflower, cut into bite-sized florets
1/2 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/2 cup water
1/2 cup milk (or plant-based alternative)
oil for frying
For the sauce:
1/3 cup mayonnaise (or vegan mayo)
2 tablespoons sweet chili sauce
1 tablespoon Sriracha (adjust for spice preference)
1 teaspoon honey or maple syrup
For garnish:
Sesame seeds
Red chilies, sliced
Scallions, chopped
Instructions:
1. Prepare the batter:
- In a mixing bowl, whisk together flour, cornstarch, garlic powder, smoked paprika, and salt.
- Gradually add water and milk, whisking until smooth and lump-free.
- 2. Coat the cauliflower:
- Dip each cauliflower floret into the batter, ensuring it’s fully coated. Let any excess batter drip off.
3. Fry the cauliflower:
- Heat vegetable oil in a deep pan or skillet to 350°F (175°C). Fry the coated cauliflower florets in batches, turning occasionally, until golden and crispy, about 3-4 minutes per batch.
- Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
4. Make the sauce:
- In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until smooth and creamy.
5. Toss and serve:
In a large bowl, gently toss the crispy cauliflower with the Bang Bang sauce until well coated.
6. Garnish:
Transfer to a serving plate and garnish with sesame seeds, sliced red chilies, and scallions. Serve immediately for maximum crispiness.
