Ingredients:(Servings: 4)
For the cauliflower:

1 medium head of cauliflower, cut into bite-sized florets

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/2 cup water

1/2 cup milk (or plant-based alternative)

oil for frying

For the sauce:

1/3 cup mayonnaise (or vegan mayo)

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 teaspoon honey or maple syrup

For garnish:

Sesame seeds

Red chilies, sliced

Scallions, chopped

Instructions:

1. Prepare the batter:
  • In a mixing bowl, whisk together flour, cornstarch, garlic powder, smoked paprika, and salt.
  • Gradually add water and milk, whisking until smooth and lump-free.
  • 2. Coat the cauliflower:
  • Dip each cauliflower floret into the batter, ensuring it’s fully coated. Let any excess batter drip off.
3. Fry the cauliflower:
  •  Heat vegetable oil in a deep pan or skillet to 350°F (175°C). Fry the coated cauliflower florets in batches, turning occasionally, until golden and crispy, about 3-4 minutes per batch.
  • Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
4. Make the sauce:
  • In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey until smooth and creamy.
6. Garnish:
Transfer to a serving plate and garnish with sesame seeds, sliced red chilies, and scallions. Serve immediately for maximum crispiness.
