Bang Bang Chicken Skewers
Ingredients:
- wooden skewers, soaked in water for 30 minutes
Chicken
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Bang Bang Sauce
- 1 ¼ cups (290 g) mayonnaise
- ⅔ cup Thai sweet chili sauce
- 2 teaspoons Sriracha, or more to taste
- 2 tablespoons honey
How to Do It:
- Put the chicken breasts that have been cut into cubes, oil, paprika, garlic powder, salt, and pepper in a big bowl. Toss the chicken to cover it all over. Put four to five chicken cubes on each stick, working with one at a time.
- Put the honey, Sriracha, Thai sweet chili sauce, and mayonnaise in a small bowl. Mix well. It will make about ¾ cup of bang bang sauce.
- Put half of the sauce into a different bowl and save it for after the chicken is done cooking. Brush the chicken all over with the rest of the sauce.
- Stick the skewers in the air fryer basket so they are all lined up in a single layer. You might have to work in groups, depending on how big the air fryer is.
- Air fry at 400°F for 11 to 12 minutes, turning over once. When the chicken hits 165°F on the inside, it is fully cooked.
- Move the skewers to a plate and drizzle or brush them with the bang bang sauce that you saved earlier.
- Serve right away.
