Barbecue Ribs with Roasted Potatoes recipe
Dinner doesn’t get any better than this—there’s something enchanting about the smell of roasted potatoes with rosemary and the sizzle of ribs!
Ingredients:
- – 2 lbs pork ribs (meaty and tender)
- – 1/2 cup barbecue sauce (smoky and sweet)
- – 2 tablespoons olive oil
- – 1 teaspoon smoked paprika
- – 1 teaspoon garlic powder
- – 1/2 teaspoon salt
- – 1/2 teaspoon black pepper
- – 1 teaspoon dried thyme (optional)
- – 1 lb baby potatoes, halved
- – 2 sprigs fresh rosemary (for garnish)
- – 1 tablespoon melted butter (for potatoes)
Directions:
1. Get the ribs ready:
- Season the ribs with salt, black pepper, garlic powder, olive oil, and smoked paprika.
- Transfer to an ovenproof pan and cover with foil.
2. Give the ribs a roast:
- Bake for two hours at 300°F (150°C) in a preheated oven, or until tender.
- After liberally brushing the ribs with barbecue sauce, they should be caramelized after 5 to 10 minutes in the broiler.
3. Preheat the potatoes:
- Combine melted butter, salt, and thyme with the halved potatoes. Arrange on a baking sheet and bake for 25 to 30 minutes, or until golden, at 400°F (200°C).
4. Put together and serve:
- Arrange the potatoes and ribs on a platter and add some fresh rosemary sprigs as a garnish.
