BBQ Chicken Quesadilla (Air Fryer Recipe)

Ingredients (Makes 2 Quesadillas)
For the Filling:
2 large flour tortillas (burrito-size)
1 cup cooked shredded chicken (rotisserie or leftover)
1/3 cup BBQ sauce (smoky or sweet variety)
1 cup shredded mozzarella or cheddar cheese (or a mix)
2 tbsp red onion, finely diced (optional)
1 tbsp chopped cilantro (optional)
Cooking spray or olive oil (for crisping)
For Serving (Optional):
Sour cream
Extra BBQ sauce
Ranch dressing
Pickled jalapeños or salsa
Instructions:
Prepare the Chicken Filling
In a bowl, toss the shredded chicken with BBQ sauce until well coated.
Stir in diced red onion and cilantro if using.
Assemble the Quesadillas
Lay out a tortilla and sprinkle half the cheese on one side.
Add a generous scoop of BBQ chicken mixture.
Sprinkle remaining cheese over the chicken.
Fold the tortilla in half to form a half-moon shape.
Air Fry
Preheat air fryer to 375°F (190°C) for 2–3 minutes.
Lightly spray both sides of the quesadilla with oil or cooking spray.
Place in air fryer basket (you may need to cook one at a time depending on size).
Air fry for 6–8 minutes, flipping halfway through, until golden brown and crispy.
Check at 6 minutes; if using a thinner tortilla or less filling, it may cook faster.
