Ingredients
For the Beef Tips:
2 lbs (900g) beef sirloin or stew meat, cut into 1-inch cubes
2 tbsp olive oil
1 tbsp butter
1 medium yellow onion, diced
3 garlic cloves, minced
8 oz (225g) cremini mushrooms, sliced
2 cups beef broth (low-sodium preferred)
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp thyme (dried or fresh)
1 tsp rosemary (dried or fresh)
1 bay leaf
Salt and black pepper to taste
For the Gravy:
3 tbsp all-purpose flour
1 tbsp butter
1 cup water or additional beef broth (as needed)
½ cup heavy cream or half-and-half (optional, for creamier gravy)
For Serving:
Mashed potatoes, rice, or egg noodles
Fresh parsley, chopped (for garnish)
Instructions
Sear the Beef
Pat dry the beef cubes with a paper towel to ensure a good sear. Season generously with salt and pepper.
In a large skillet or Dutch oven, heat 1 tbsp olive oil over medium-high heat.
Working in batches, sear the beef cubes on all sides until browned (about 2-3 minutes per side). Remove and set aside.
Sauté Aromatics & Mushrooms
In the same pot, add 1 tbsp butter and remaining 1 tbsp olive oil.
Add the onion and cook until softened (about 3 minutes).
Stir in the garlic and mushrooms, cooking until mushrooms are golden (about 5 minutes).
Deglaze & Simmer
Sprinkle flour over the mushrooms and stir for 1 minute to cook off the raw flour taste.
Slowly pour in beef broth, scraping the bottom of the pot to release browned bits.
Add Worcestershire sauce, Dijon mustard, thyme, rosemary, and bay leaf. Stir well.
Return the beef to the pot, cover, and simmer on low heat for 1 to 1.5 hours, stirring occasionally, until beef is tender.
Thicken the Gravy
If the gravy is too thin, mix 1 tbsp butter + 1 tbsp flour in a small bowl, then whisk into the simmering gravy.
For a creamier texture, stir in heavy cream (optional).
Simmer for another 5-10 minutes until thickened to desired consistency.
Serve
Discard the bay leaf and adjust seasoning with salt and pepper if needed.
