Berrylicious Strawberry Crunch Cheesecake (Air Fryer Recipe)
Introduction:
Imagine a silky, rich cheesecake nestled over a golden cookie crust, swirled with sweet strawberry sauce, and topped with that nostalgic Strawberry Crunch we all remember from those childhood ice cream bars. Now imagine all of that made in your air fryer, with no need to heat up the whole kitchen. Yes, it’s real—and it’s ridiculously delicious.
This air fryer cheesecake is a total showstopper: perfect for birthdays, brunches, or whenever you’re craving something sweet, creamy, and berry-packed. And the best part? It’s way easier than traditional baked cheesecake—no water bath, no cracks, just pure strawberry bliss.
Ingredients
For the Crust:
1 1/4 cups Golden Oreos (or graham crackers), crushed
2 tbsp granulated sugar
4 tbsp unsalted butter, melted
For the Cheesecake Filling:
2 (8 oz) blocks cream cheese, softened
1/2 cup granulated sugar
1/4 cup sour cream
1 tsp vanilla extract
2 large eggs
1 tbsp all-purpose flour (helps prevent cracking)
For the Strawberry Swirl:
1/3 cup strawberry jam or preserves
1 tbsp water (to thin, if needed)
For the Strawberry Crunch Topping:
10 Golden Oreos, crushed
1/3 cup freeze-dried strawberries, crushed
2 tbsp butter, melted
Optional: 1 tbsp strawberry gelatin mix for color & extra flavor
Equipment:
Air fryer
6-inch springform pan or air fryer-safe cake pan
Parchment paper
Hand mixer or stand mixer
Instructions
Prep the Pan
Line the bottom of your springform pan with parchment paper and grease the sides. Preheat air fryer to 300°F (150°C) for 5 minutes.
Make the Crust
Mix the crushed Golden Oreos, sugar, and melted butter in a bowl.
Press into the bottom of your pan and up the sides slightly.
Air fry the crust at 300°F for 5 minutes to set it. Let cool slightly.
Make the Cheesecake Filling
In a bowl, beat the cream cheese and sugar until smooth (no lumps).
Add the sour cream, vanilla, and flour—mix well.
Add eggs one at a time, mixing just until combined (don’t overmix).
Pour the filling over the cooled crust.
Add the Strawberry Swirl
Warm the strawberry jam slightly so it’s pourable.
Drop spoonful over the cheesecake batter.
Use a toothpick or knife to gently swirl it into the batter.
Air Fry the Cheesecake
Cover the top loosely with foil (to prevent over-browning).
Air fry at 300°F (150°C) for 25–30 minutes.
Cheesecake is done when the edges are set and the center is slightly jiggly.
Cool in the air fryer for 15 minutes, then transfer to the fridge to chill at least 4 hours or overnight.
Make the Strawberry Crunch Topping
In a bowl, mix crushed Golden Oreos, freeze-dried strawberries, and optional gelatin mix.
Stir in melted butter until crumbly.
Once cheesecake is chilled and firm, sprinkle generously over the top.
Optional Garnishes:
Fresh strawberries
Whipped cream
Drizzle of strawberry sauce
Storage:
Store leftovers in the fridge for up to 4 days.
You can freeze slices individually wrapped for up to 2 months.
Tips for Perfection:
Use room-temperature cream cheese for smooth batter.
Don’t overmix once the eggs are added—this keeps the texture creamy.
Chill thoroughly for the best flavor and structure.
