Table of Contents

Introduction:

Meatloaf muffins are a modern twist on the classic comfort food—perfect for weeknight dinners or meal prep. Shaped into individual portions, they cook in just a fraction of the time compared to a whole loaf. The air fryer gives them a deliciously caramelized glaze while keeping the inside moist and tender. Plus, they’re freezer-friendly and kid-approved

Prep: 15 minutes

Cook: 15–18 minutes

Resting Time: 5 minutes

Ingredients:

For the Meatloaf Muffins:

1 lb (450g) ground beef (85/15 or 90/10)

½ lb (225g) ground pork or turkey (optional, or use all beef)

½ cup breadcrumbs (or panko)

¼ cup milk

1 egg

¼ cup finely chopped onion

2 cloves garlic, minced

2 tbsp ketchup

1 tbsp Worcestershire sauce

1 tsp dried parsley (or Italian seasoning)

½ tsp salt

½ tsp black pepper

For the Glaze:

¼ cup ketchup

1 tbsp brown sugar

1 tsp Dijon mustard (optional)

Instructions:

Preheat the Air Fryer:
Set your air fryer to 370°F (188°C) and let it preheat while you prep.

Mix the Meatloaf Base:
In a large bowl, mix together the breadcrumbs and milk. Let it sit for 2 minutes to soften.

Add ground beef, ground pork (if using), onion, garlic, egg, ketchup, Worcestershire sauce, herbs, salt, and pepper. Mix gently until just combined—do not overmix.

Shape into Muffins:
Use a muffin tin (if it fits your air fryer) or shape into palm-sized balls and flatten the tops slightly. Spray lightly with oil.

Air Fry the Muffins:

Place 4–6 muffins in the air fryer basket, depending on size (don’t overcrowd).

Cook at 370°F (188°C) for 10 minutes.

Add the Glaze:
While cooking, mix the ketchup, brown sugar, and mustard in a small bowl.
After 10 minutes, brush the glaze generously over each muffin.

Finish Cooking:
Return to the air fryer and cook for 5–8 more minutes, or until internal temperature reaches 160°F (71°C).

Rest Before Serving:
Let the meatloaf muffins rest for 5 minutes before serving to retain juiciness.

Serving Suggestions:

Pair with mashed potatoes, roasted vegetables, or a fresh green salad.

Great for meal prep: Store in the fridge for up to 4 days or freeze for 2 months.

Batch Cooking Tip:

You can double the recipe and cook in batches. Reheat in the air fryer at 350°F for 3–4 minutes.
