½ cup breadcrumbs (or panko)
¼ cup milk
1 egg
¼ cup finely chopped onion
2 cloves garlic, minced
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp dried parsley (or Italian seasoning)
½ tsp salt
½ tsp black pepper
For the Glaze:
¼ cup ketchup
1 tbsp brown sugar
1 tsp Dijon mustard (optional)
Instructions:
Preheat the Air Fryer:
Set your air fryer to 370°F (188°C) and let it preheat while you prep.
Mix the Meatloaf Base:
In a large bowl, mix together the breadcrumbs and milk. Let it sit for 2 minutes to soften.
Add ground beef, ground pork (if using), onion, garlic, egg, ketchup, Worcestershire sauce, herbs, salt, and pepper. Mix gently until just combined—do not overmix.
Shape into Muffins:
Use a muffin tin (if it fits your air fryer) or shape into palm-sized balls and flatten the tops slightly. Spray lightly with oil.
Air Fry the Muffins:
