Blueberry Cottage Cheese Pancake Bites

These Blueberry Cottage Cheese Pancake Bites are a wholesome, high-protein twist on classic pancakes, made perfectly bite-sized for easy snacking or meal prep. Soft on the inside, lightly golden on the outside, and bursting with juicy blueberries, they’re ideal for breakfast, brunch, or a healthy sweet treat. Best of all, they’re quick to make and can be cooked in either an air fryer or oven.
Ingredients (Makes 10–12 Bites)
1 cup cottage cheese
2 large eggs
½ ripe banana, mashed
½ cup oat flour (or almond flour for low-carb)
1 tablespoon honey or maple syrup (optional)
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt
½ cup fresh or frozen blueberries
Instructions
Start by preparing the batter. In a blender or food processor, combine the cottage cheese and eggs. Blend until smooth and creamy—this step helps create a light, fluffy texture and removes any curds from the cottage cheese. Add the mashed banana, oat flour, honey or maple syrup (if using), vanilla extract, baking powder, and salt. Blend again until the batter is smooth and thick, similar to pancake batter.
Gently fold in the blueberries using a spoon or spatula. If using frozen blueberries, do not thaw them first, as this helps prevent excess moisture and color bleeding into the batter.
Air Fryer Method
Preheat the air fryer to 180°C / 350°F. Lightly grease silicone molds or a mini muffin pan that fits inside your air fryer basket. Spoon the batter evenly into the molds, filling each about three-quarters full. Air fry for 8–10 minutes, or until the bites are puffed, set in the center, and lightly golden on top. Let them cool slightly before removing.
Oven Method
Preheat the oven to 180°C / 350°F. Grease a mini muffin tin well or line it with silicone cups. Fill each cavity about three-quarters full with batter. Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for a few minutes before serving.
Serving & Storage
Serve these pancake bites warm with a drizzle of honey or maple syrup, a spoonful of Greek yogurt, or extra fresh blueberries on the side. They’re also delicious plain and naturally sweet.
Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the air fryer for 1–2 minutes or in the microwave for 20–30 seconds.
