Boursin Stuffed Chicken Breast with Spinach and Mozzarella

Boursin Stuffed Chicken Breast with Spinach and Mozzarella

Ingredients

    • 4 boneless, skinless chicken breasts (8-9 ounces each)
    • Salt and pepper, to taste
    • 3 tablespoons olive oil, divided
    • ½ medium onion, finely chopped
    • 3 cloves garlic, minced
    • 2 cups fresh baby spinach, packed
    • 1 (5.2-ounce) package Boursin Fine Herbs & Garlic cheese, softened
  • ½ cup shredded mozzarella cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional but recommended)

Directions:

  1. Sauté the onion and garlic in a pan over medium heat with 1 tablespoon of olive oil. Add the chopped onion and cook for 3–4 minutes, or until it becomes soft. After that, add the garlic and heat for a further 30 seconds, or until fragrant.
  2. Add Spinach: Cook the fresh spinach for one to two minutes, or until it has wilted. Remove the mixture from the stove and let it cool gently for a few minutes.
  3. Combine Cheeses and Spinach: In a bowl, combine the sautéed spinach, onion, and garlic with the softened Boursin cheese, shredded mozzarella, Italian seasoning, and red pepper flakes (if using). Mix thoroughly.
  4. Preheat Oven: Set the oven temperature to 375°F, or 190°C.
  5. Cut the chicken breasts into pockets: Making sure not to cut all the way through, make a horizontal pocket in each chicken breast.
  6. Stuff the Chicken: Sprinkle salt and pepper on each chicken breast. Evenly distribute the cheese and spinach mixture into each pocket, then lightly press to close.
  7. Heat the remaining 2 tablespoons of olive oil in an ovenproof skillet over medium-high heat in order to sear the chicken. In a heated pan, brown the filled chicken breasts for two to three minutes on each side, or until they are golden.
  8. Bake the chicken for 15 to 20 minutes, or until it is cooked through and has an internal temperature of 165°F (74°C), after transferring the pan to a preheated oven.
  9. Serve Hot: Before slicing, let the chicken a few minutes to rest. Serve with a fresh salad, mashed potatoes, or a side of veggies.
