When winter blues hit hard, this hearty breakfast casserole became my weekend morning ritual, filling the house with irresistible aromas that got everyone out of bed without an alarm.
Breakfast Lasagna recipe
Ingredients:
For the meat layer:
– 1 pound breakfast sausage
– 1/2 pound ground beef
– 1 red bell pepper, diced
– 1 small onion, finely chopped
– 2 cloves garlic, minced
For the cheese mixture:
– 15 oz ricotta cheese
– 2 cups shredded cheddar cheese
– 2 cups mozzarella cheese
– 4 large eggs
– 1/4 cup milk
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
Additional ingredients:
– 12 no-boil lasagna noodles
– 1 cup shredded cheddar cheese (for topping)
– Fresh parsley for garnish
Instructions:
1. Prepare meat mixture:
– Brown sausage and ground beef in a large skillet
– Add bell pepper, onion, and garlic
– Cook until vegetables are soft
– Drain excess fat
2. Make cheese mixture:
– In a large bowl, combine ricotta, cheddar, and mozzarella
– Mix in eggs, milk, and seasonings
– Stir until well combined
3. Assemble lasagna:
– Preheat oven to 350°F (175°C)
– Layer in 9×13 baking dish: noodles, meat, cheese mixture
– Repeat layers, ending with cheese mixture
– Top with additional cheddar cheese
4. Bake and serve:
– Cover with foil and bake for 30 minutes
– Remove foil and bake additional 15 minutes until golden
– Let rest 10 minutes before serving
– Garnish with fresh parsley
