Ingredients
For the Chicken Rollups:
2 large boneless, skinless chicken breasts (cut in half lengthwise to make 4 thinner pieces)
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika (optional, for a smoky flavor)
For the Broccoli Cheddar Filling:
¾ cup broccoli florets, finely chopped (fresh or frozen, thawed & drained)
½ cup shredded cheddar cheese (or a blend of cheddar & mozzarella for extra gooeyness)
¼ cup cream cheese, softened
1 teaspoon Dijon mustard (optional, for extra flavor)
For the Coating:
½ cup panko breadcrumbs (for crispiness)
¼ cup parmesan cheese, grated (adds extra crunch & flavor!)
1 egg, beaten
1 tablespoon olive oil spray
Instructions
Prepare the Chicken
Slice each chicken breast in half lengthwise, so you have 4 thin fillets.
Place the chicken pieces between two sheets of plastic wrap and pound them lightly with a mallet or rolling pin to an even thickness (~¼ inch).
Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
Make the Broccoli Cheddar Filling
In a small bowl, mix together chopped broccoli, shredded cheddar, cream cheese, and Dijon mustard until well combined.
Spread about 2 tablespoons of the mixture onto each chicken fillet.
Roll & Coat the Chicken
Carefully roll up each chicken fillet around the filling, securing with toothpicks if needed.
Dip each rollup in beaten egg, then coat in the breadcrumb-parmesan mixture. Press gently to make sure the coating sticks.
Air Fry the Rollups
Preheat your air fryer to 375°F (190°C) for 3 minutes.
Lightly spray the air fryer basket with olive oil spray.
Place the rollups seam-side down in the air fryer basket, making sure they are not touching.
Air fry for 12-15 minutes, flipping halfway through, until the chicken is golden brown and the internal temperature reaches 165°F (75°C).

Remove toothpicks before serving.
Let the rollups rest for 2-3 minutes before slicing.
