Brownie Cookies Meltaway
Components:
- One cup of granulated sugar and half a cup of softened unsalted butter
- Two huge eggs
- One teaspoon of vanilla extract
- Half a cup of all-purpose flour
- 1/3 cup of cocoa powder without sugar
- Half a teaspoon of baking powder
- Half a cup of semi-sweet chocolate chips and 1/4 teaspoon of salt
- 1/4 cup of sugar powder (for rolling)
Directions:
- Set the oven’s temperature to 350°F (175°C). Use silicone baking mats or parchment paper to line a baking pan.
- Get the batter ready: Combine the granulated sugar and softened butter in a large mixing bowl and beat until light and fluffy. An electric mixer can be used for two to three minutes on medium speed.
- Add vanilla and eggs: One by one, beat in the eggs, making sure to beat each one completely before adding the next. Add the vanilla extract and stir.
Mix the dry ingredients together: Mix the flour, baking powder, cocoa powder, and salt in an other basin. - Combine the dry and wet ingredients: Add the dry ingredients to the wet ones a little at a time, stirring just until incorporated. The dough is going to be sticky and thick.
Add chocolate chips: Until they are equally distributed, fold in the semi-sweet chocolate chips. - Form the cookies: Using your hands, scoop tablespoon-sized quantities of dough and form them into balls. Coat each ball of dough completely by rolling it in powdered sugar. When the cookies bake, this will give them the “melted away” look.
- Bake: Arrange the balls of covered dough, about 2 inches apart, on the baking sheet that has been prepared. Bake for 10 to 12 minutes, or until the center is still just a little mushy but the sides are set. As they cool, the cookies will continue to solidify.
- Cool: After five minutes of cooling on the baking sheet, move the cookies to a wire rack to finish cooling.
Advice:
Soft center: Take care not to bake the cookies for too long. They have a “meltaway” texture due to a soft center.
Add-ins: For a unique twist, you can incorporate chopped nuts like pecans or walnuts or even white chocolate chips.
Storage: For up to a week, keep the cookies at room temperature in an airtight container.
