Ingredients (Makes 2 Wraps)
For the Buffalo Chicken:
1 cup cooked chicken (shredded or diced)
2 tablespoons buffalo sauce (adjust to taste)
1 teaspoon oil (optional, for extra richness)
For the Scrambled Eggs:
3 large eggs
2 tablespoons milk (optional, for fluffier eggs)
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon olive oil
For the Wraps:
2 large tortillas (whole wheat, flour, or low-carb)
½ cup feta or mozzarella cheese
¼ cup diced tomatoes
¼ cup shredded lettuce (or spinach)
2 tablespoons ranch or blue cheese dressing (optional)
1 tablespoon chopped green onions (for garnish)
Instructions
Prepare the Buffalo Chicken:
In a skillet over medium heat, oil and add shredded chicken.
Pour in buffalo sauce, stir, and cook for 2–3 minutes until heated through. Set aside.
Scramble the Eggs:
In a bowl, whisk together eggs, milk, salt, and black pepper.
Heat butter in a nonstick pan over medium-low heat.
Pour in the eggs and cook, stirring gently, until soft and fluffy. Remove from heat.
Assemble the Wraps:
Warm tortillas in a dry pan or microwave for a few seconds.
Sprinkle cheese on the tortilla, then layer with buffalo chicken, scrambled eggs, lettuce, tomatoes, and ranch/blue cheese dressing.
Top with chopped green onions.
Wrap & Toast:
Fold in the sides and roll the wrap tightly.
Toast in a dry pan over medium heat for 1–2 minutes per side until golden and crispy.
