Cabbage Rice Patties
Ingredients
1/2 young cabbage, finely chopped
1 cup rice
2 cups water
2 eggs
Salt, to taste
80 grams mozzarella cheese, shredded
Olive oil
Directions
Cook the Rice
In a pot, combine 1 cup of rice with 2 cups of water. Cook the rice until it’s fully cooked and tender. Let it cool slightly.
Prepare the Mixture
In a large bowl, beat 2 eggs and add a pinch of salt. Mix well.
Add the cooked rice, chopped cabbage, and shredded mozzarella cheese to the bowl. Mix everything thoroughly.
Form Patties
Take about 3-4 tablespoons of the mixture and form into patties.
Cook the Patties
Heat a drizzle of olive oil in a frying pan over low heat.
Fry the patties, covered, for 3-4 minutes on each side until golden brown and cooked through.
