Cajun Style Seafood Alfredo with Lobster, Crab, and Salmon

For the Cajun Seafood:
1/2 lb lobster tail (or lobster meat, peeled and deveined)
1/2 lb crab meat (fresh or imitation, but fresh is preferred)
1/2 lb salmon fillet (skinless, cut into bite-sized pieces)
2 tablespoons olive oil
1 tablespoon Cajun seasoning (adjust to taste)
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
For the Alfredo Sauce:
2 cups heavy cream
1 cup grated Parmesan cheese (freshly grated for best results)
1/2 cup unsalted butter
3 cloves garlic (minced)
1/4 cup chicken broth (or seafood broth for more flavor)
1 teaspoon Cajun seasoning
1/2 teaspoon Italian seasoning (optional)
Salt and pepper to taste
Fresh parsley (for garnish)
For the Pasta:
12 oz fettuccine pasta (or your favorite pasta)
Salt (for the pasta water)
Instructions:
1. Prepare the Pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water for later.
Set the pasta aside and keep it warm.
2. Cook the Cajun Seafood:
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Add the salmon pieces and cook for about 3-4 minutes on each side until browned and cooked through. Remove the salmon from the skillet and set it aside.
In the same skillet, add the lobster tail (or lobster meat) and crab. Sprinkle the Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper over the seafood. Cook for about 3-4 minutes, turning the seafood occasionally, until cooked through and lightly browned. Remove from the skillet and set it aside with the salmon.
3. Make the Alfredo Sauce:
In the same skillet, reduce the heat to medium-low and add the butter. Once the butter is melted, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and bring it to a gentle simmer, stirring occasionally. Add the chicken (or seafood) broth, Cajun seasoning, and Italian seasoning (if using). Simmer for about 3-4 minutes until the sauce begins to thicken.
Stir in the grated Parmesan cheese and continue to stir until the cheese is fully melted and the sauce becomes creamy. Taste and adjust seasoning with salt and pepper if necessary.
4. Combine the Pasta and Seafood:
Add the cooked fettuccine pasta to the Alfredo sauce, tossing to coat the pasta evenly with the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
Gently fold in the cooked seafood (lobster, crab, and salmon) into the pasta and sauce, stirring carefully to combine everything.
5. Serve:
Plate the Cajun Seafood Alfredo with Lobster, Crab, and Salmon onto serving dishes. Garnish with fresh parsley and a little extra grated Parmesan cheese, if desired.
