Recipe for Caramelized Apple Cake with Almonds and Cream Cheese Frosting
Ingredients for the Apple Caramel:
- One kilogram of peeled and sliced apples
- Six tablespoons (90g) of sugar
- One lemon’s juice
- 1 tablespoon (10g) cornstarch
- For the cake dough sponge:
- Five eggs
- 130g of sugar (1/2 cup plus 2 tablespoons)
- A dash of salt
- One cup (170g) of all-purpose flour
- 50g (1/5 cup) of milk
- For the frosting made of cream cheese:
- One cup (200g) of heavy cream (33% fat)
- 1.3 cups (300g) of cream cheese
- 50g (1/4 cup) of sugar

Instructions:
1. Apples with caramel:
Get the apples ready:
- One kilogram of apples should be peeled and cut into small pieces.
Make caramel:
- Put the lemon juice and 90g of sugar in a big pan. Over medium heat, the sugar will melt and begin to caramelize a little.
- To coat the chopped apples in the caramel, add them and mix. Cook until the apples are tender, 5 to 7 minutes.
Make thicker:
- To thicken the mixture, blend 10g of cornstarch into a slurry with a small amount of water and then add the apples.

- To firm up, cover and refrigerate the icing for at least 4 hours.
4. Put the Cake Together:
Arrange the Apples:
- Evenly distribute the caramelized apples on top of the cake after it has cooled.
Pour in the cream:
- Cover the caramelized apples with the chilled cream cheese icing.
Add some almonds on top:
- Lastly, top the cream layer with 50g of roasted flaked almonds.
