Caramelized Spinach, Sweet Potato, Butternut Squash, Carrot & Beet Medley Cottage Cheese Quiche

Ingredients
1 cup sweet potato (peeled and diced)
1 cup butternut squash (cubed)
1 carrot (grated)
1 small beet (grated)
2 cups fresh spinach
1 cup cottage cheese
4 large eggs
½ cup milk
½ cup shredded cheese (optional)
1 small onion (chopped)
2 tbsp olive oil
2 garlic cloves (minced)
1 tsp dried oregano
Salt and black pepper to taste
Instructions
Preheat your oven to 180°C (350°F) and lightly grease a baking dish or pie pan.
Start by roasting the sweet potato and butternut squash. Toss them with 1 tablespoon olive oil, salt, and pepper, then spread on a baking tray and roast for 20–25 minutes until tender and slightly caramelized.
In a pan, heat the remaining olive oil and sauté the chopped onion until soft. Add garlic and cook for a minute, then add spinach and cook until wilted. Stir in the grated carrot and beet and cook for another 2–3 minutes until slightly softened.
In a large bowl, whisk together eggs, milk, cottage cheese, oregano, salt, and black pepper until well combined. Add the roasted vegetables and sautéed mixture, mixing gently. Stir in shredded cheese if using.
Pour the mixture into the prepared baking dish and spread evenly. Bake for 35–40 minutes, or until the center is set and the top is lightly golden. Let it cool for 10 minutes before slicing.
