  • 2 tomatoes, chopped (or 1 can of diced tomatoes)
  • 2 cups beef broth (or water)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • 2 bay leaves
  • 1-2 medium potatoes, peeled and diced (optional)
  • Fresh cilantro, for garnish

Instructions

  1. Brown the Meat:
    • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches and brown them on all sides. Remove the meat and set aside.
  2. Cook the Aromatics:
    • In the same pot, add the chopped onion and bell pepper (if using). Sauté for about 5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Add Tomatoes and Spices:
    • Stir in the chopped tomatoes (or canned tomatoes) along with cumin, chili powder, paprika, oregano, salt, and pepper. Cook for 2-3 minutes until the tomatoes start breaking down.
  4. Return the Meat:
    • Add the browned beef back into the pot. Pour in the beef broth, add bay leaves, and stir well.
  5. Simmer:
    • Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the meat is tender. Stir occasionally.
  6. Add Potatoes (Optional):
    • If using potatoes, add them in the last 30 minutes of cooking. This allows them to cook through without becoming too mushy.
  7. Taste and Adjust:
    • Taste and adjust the seasoning with more salt, pepper, or spices as desired.
  8. Serve:
    • Remove bay leaves before serving. Garnish with fresh cilantro. Serve hot with rice, beans, or tortillas.
