Carnivore Cheesecake

Ingredients

  • 2 Cups Cream Cheese
  • 3/4 Sour Cream
  • 3 Eggs
  • 1 Packet Kroger Unflavored Beef Gelatin
  • Optional Dirty Carnivore Ingredients (you DO NOT have to add)
  • 2/3 Cup Monk Fruit
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Lemon Extract
  • 1 Gram Cheesecake Kief Decarbed

Directions

  • In a large bowl, add the cream cheese, sour cream, and eggs. Add optional ingredients to the bowl now, if desired.
  • Mix on medium speed with a handheld mixer until creamy and smooth.
  • Sprinkle the gelatin over the mixture and gently mix in.
  • Let the cheesecake batter set while the oven preheats to 320 degrees.
  • Take the spring form pan and wrap the bottom with tinfoil so that water does not enter the cheesecake mixture (see photo on bottom of recipe post).
  • Take your pan for the water bath and fill with 1 1/2 inches of water.
  • When the oven is preheated, add the cheesecake batter to the spring form pan and then insert the pan into the water bath.
  • Bake for 1 hour and 30 minutes.
  • When the time is up, turn the oven off and open the oven door and let the cheesecake slowly cool for 15 minutes to prevent cracking.
  • Remove from the oven and cool completely on a countertop. Put the cheesecake into the fridge and let it set overnight or at minimum 4 hours uncovered.

Notes

  • Cannabis is technically not Carnivore; however, I see plants as medicine as long as they are extracted correctly and used only when needed.

  • Any strain substitute for Cheesecake. When preparing this recipe, I would recommend pairing strains that possess vanilla and sugar like terpenes and flavonoids. The following cultivars would be ideal: Blueberry Cheesecake, Strawberry Cheesecake, or Cheese. If you do not have access to these strains, then use your nose and taste buds to find other cultivar’s that have similar smell and flavor profiles.
