Ingredients:

- 2 cans chunk chicken breast in water (drained)
- 2 large eggs
- 2 ounces shredded mozzarella

- 6 tablespoons heavy cream
- 2 tablespoons dry ranch seasoning mix
For the Toppings:
- 6 ounces shredded rotisserie chicken
- 1.5 ounces sugar-free uncured bacon (cooked and crumbled)
- 4 ounces Monterey Jack cheese (shredded)
Instructions:
1. Prepare the Chicken Crust:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Combine the chicken and eggs: In a large mixing bowl, add the drained chunk chicken breast. Use a fork or your hands to break the chicken down into smaller, fine pieces. Add the two large eggs to the bowl and mix thoroughly.
- Add mozzarella: Stir in the shredded mozzarella until well combined with the chicken and eggs.
- Form the crust: Spread the chicken mixture evenly onto the prepared baking sheet. Shape it into a circle or square depending on your preference. Press it down to ensure it’s an even thickness across the entire crust.
- Bake the crust: Place the crust in the preheated oven and bake for 15–18 minutes, or until the edges begin to turn golden and the crust is firm to the touch. Once baked, remove it from the oven and set aside.
2. Make the Ranch Cream Sauce:
- Cream cheese base: In a small saucepan, heat the softened cream cheese over low heat, stirring constantly until it begins to soften and melt.
- Add the heavy cream: Pour in the heavy cream and continue stirring until smooth and creamy. If the mixture is too thick, you can add a little more heavy cream to reach your desired consistency.
- Season the sauce: Sprinkle in the ranch seasoning mix and stir until fully combined. Taste the sauce and adjust the seasoning if needed. Once smooth and well-mixed, remove from the heat.
3. Assemble the Pizza:
- Spread the sauce: Evenly spread the ranch cream sauce over the baked chicken crust, ensuring you cover it from edge to edge.
- Add the toppings: Top the sauce with the shredded rotisserie chicken, crumbled sugar-free bacon, and shredded Monterey Jack cheese. Make sure to distribute everything evenly across the pizza.
4. Final Bake:
- Bake the pizza: Return the pizza to the oven and bake for an additional 8–10 minutes or until the cheese is melted and bubbly, and the edges of the crust are golden brown.
5. Slice and Serve:
- Remove the pizza from the oven and let it cool for a couple of minutes. Then, slice it into 8 pieces and serve!
