Carnivore Stuffed Meatloaf Bites
Ingredients:
For the Meatloaf:
1 lb ground beef (preferably 80% lean for juiciness)
1/4 cup grated Parmesan cheese (optional, for added flavor)
1 egg (helps bind the meat)
1/4 cup heavy cream (optional, for extra richness)
Salt and pepper to taste
1 tsp garlic powder (optional)
1 tsp onion powder (optional)
1/2 tsp paprika (optional)
For the Stuffing:
4 oz cream cheese (softened)
1/2 cup shredded mozzarella cheese (or any cheese of your choice)
1 tbsp fresh parsley or chives (optional, for garnish)
For the Coating:
1/4 cup grated Parmesan cheese (optional, for extra crust)
1 tbsp butter (for greasing or brushing the bites)
Instructions:
1. Prepare the Meatloaf Mixture:
Preheat your oven to 375°F (190°C).
In a large bowl, mix the ground beef, egg, Parmesan cheese, heavy cream, and seasonings (garlic powder, onion powder, paprika, salt, and pepper).
Use your hands to mix everything thoroughly until the ingredients are well combined and the mixture is sticky and cohesive.
2. Make the Stuffing:
In a separate bowl, mix the softened cream cheese and shredded mozzarella cheese until smooth. You can also add any additional seasonings or herbs of your choice.
3. Form the Meatloaf Bites:
Take a small portion (about 1.5 to 2 tbsp) of the meat mixture and flatten it into a small patty or disk in the palm of your hand.
Place a teaspoon of the cheese stuffing in the center of the patty and fold the edges around it to form a ball or bite-sized meatloaf.
Repeat this process for the remaining mixture and stuffing, ensuring that the stuffing is fully enclosed in the meat.
4. Coat the Meatloaf Bites:
Optionally, roll each meatloaf bite in some grated Parmesan cheese for an extra crispy coating.
Place the meatloaf bites on a parchment-lined baking sheet, ensuring there’s some space between them for even cooking.
Brush or lightly grease the top of each bite with butter to enhance browning.
5. Bake:
Bake the meatloaf bites in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the bites are golden brown on the outside.
6. Serve:
Once cooked, remove the meatloaf bites from the oven and let them cool slightly.
Garnish with some fresh herbs if desired, and serve with your favorite dipping sauces (optional but make sure they align with the carnivore diet, like a sugar-free ranch or spicy mayo).
These Carnivore Stuffed Meatloaf Bites are perfect for meal prepping, snacking, or serving as a hearty dinner. They’re also a great way to mix up your protein intake while sticking to the carnivore lifestyle.
