Carrot Apple Oat Cake
Ingredients:
- 80 g oat flakes (gluten-free)
- A pinch of salt
- 10 g coconut flour
- 5 g baking powder
- 1/2 teaspoon cinnamon
- 2 medium eggs
- 35 g sweetener (stevia or your choice)
- 15 g melted butter
- 1 medium carrot, chopped
- 1 medium apple, chopped
- 30 g chopped walnuts
Instructions:
Prepare the Dry Ingredients:
- In a large bowl, combine 80 g of oat flakes, a pinch of salt, 10 g of coconut flour, 5 g of baking powder, and 1/2 teaspoon of cinnamon. Mix well.
Add the Wet Ingredients:
- In a separate bowl, beat 2 medium eggs and add 35 g of sweetener (stevia or your choice).
- Pour in 15 g of melted butter and mix well.
Combine Ingredients:
- Add the wet ingredients to the dry ingredients and mix until well combined.
Prepare the Carrot and Apple:
- Chop 1 medium carrot and 1 medium apple into small pieces.
- Add the chopped carrot and apple to the batter and mix well.
Add the Walnuts:
- Stir in 30 g of chopped walnuts.
Prepare the Baking Tray:
- Grease an 18 x 13 cm (7 x 5 inches) baking tray with butter.
- Pour the batter into the tray and spread it evenly.
- Decorate with additional nuts if desired.
Bake:
- Preheat your oven to 180°C (360°F).
- Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve:
- Leave the bars to cool in the tray.
- Once cooled, cut into squares and serve.
