Carrot Apple Oat Cake

Ingredients:

    • 80 g oat flakes (gluten-free)
    • A pinch of salt
    • 10 g coconut flour
    • 5 g baking powder
    • 1/2 teaspoon cinnamon
    • 2 medium eggs
    • 35 g sweetener (stevia or your choice)
    • 15 g melted butter
    • 1 medium carrot, chopped
  • 1 medium apple, chopped
  • 30 g chopped walnuts

Instructions:

Prepare the Dry Ingredients:

  1. In a large bowl, combine 80 g of oat flakes, a pinch of salt, 10 g of coconut flour, 5 g of baking powder, and 1/2 teaspoon of cinnamon. Mix well.

Add the Wet Ingredients:

  1. In a separate bowl, beat 2 medium eggs and add 35 g of sweetener (stevia or your choice).
  2. Pour in 15 g of melted butter and mix well.

Combine Ingredients:

  1. Add the wet ingredients to the dry ingredients and mix until well combined.

Prepare the Carrot and Apple:

    1. Chop 1 medium carrot and 1 medium apple into small pieces.
  1. Add the chopped carrot and apple to the batter and mix well.

Add the Walnuts:

    1. Stir in 30 g of chopped walnuts.

Prepare the Baking Tray:

    1. Grease an 18 x 13 cm (7 x 5 inches) baking tray with butter.
    2. Pour the batter into the tray and spread it evenly.
  1. Decorate with additional nuts if desired.

Bake:

    1. Preheat your oven to 180°C (360°F).
  1. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve:

    1. Leave the bars to cool in the tray.
  1. Once cooled, cut into squares and serve.
