Cheese Potato Bites with Chicken
Ingredients
Regarding the Potato Bites:
- Two big russet potatoes
- One cup of shredded cheddar cheese, or any other type of cheese,
- Half a cup of cooked chicken, broken up into four to six strips
- 1/4 cup of sour cream
- Two tablespoons of chopped green onions or chives (optional)
- Half a teaspoon of powdered garlic
- To taste, add salt and pepper.
- One tablespoon of brushed olive oil
Regarding Topping:
- More chicken crumbles
- Additional cheese, if preferred
- Garnish with chopped chives or green onions.
Directions
Warm up the oven:
- Set the oven temperature to 400°F, or 200°C. Put parchment paper on a baking pan.
Get the potatoes ready:
- After cleaning the potatoes, use a fork to make several holes in them. They should be fork-tender after 45 to 60 minutes of baking on a baking sheet. Allow them to cool a little.
Prepare the filling.
- Cut the potatoes in half lengthwise after they are cold enough to handle. To make a “boat,” scoop away some of the flesh, leaving a thin boundary around the edges. After scooping the potato, put it in a mixing dish.
- To the bowl, add the crumbled chicken, sour cream, green onions (if using), shredded cheese, garlic powder, salt, and pepper. Combine the ingredients and mash until thoroughly blended.
Stuff the potato halves:
- Tightly stuff the potato mixture into the potato skins using a spoon. After the baking sheet is ready, put the stuffed potato halves on it. To make the tops crispier, carefully brush them with olive oil.
Bake:
- Bake for 15 to 20 minutes in a preheated oven, or until the potato skins are crispy and the cheese is bubbling and melted.
Serve:
- Take out of the oven and, if you’d like, top with more crumbled chicken, cheese, and chopped chives or green onions. Warm up and dig in!
