Prep Time: 15 minutes
Chill Time (optional): 15 minutes
Total Time: 15–30 minutes
Servings: ~16 filled halves (8 large strawberries)
Ingredients
8–10 large strawberries
4 oz (half block) cream cheese, softened
1/4 cup powdered sugar (adjust to taste)
1/2 tsp vanilla extract
2 tbsp heavy cream (or milk, for smoother texture)
Optional Toppings:
Crushed graham crackers
Mini chocolate chips
Melted chocolate
Sprinkles
Crushed nuts or Oreo crumbs
Instructions
Prep the Strawberries (5–7 mins)
Rinse strawberries and pat dry.
Cut each strawberry in half lengthwise.
Use a small spoon or melon baller to gently scoop out a little well in the center of each half (like a deviled egg).
Set them cut-side up on a plate or serving tray.
Make Cheesecake Filling (5 mins)
In a bowl, beat the softened cream cheese until smooth.
Add powdered sugar and vanilla extract. Mix until creamy.
Add 1–2 tbsp cream or milk to loosen the texture to a smooth, pipeable consistency.
Beat until fluffy and fully combined.
Fill the Strawberries (3–5 mins)
Spoon or pipe the cheesecake mixture into the strawberry wells.
For a fancy look, use a piping bag with a star tip.
Add Toppings (1–2 mins)
Sprinkle crushed graham crackers, drizzle with chocolate, or add any other toppings of your choice.
Chill or Serve (optional 15 mins)
You can chill them for 15 minutes to firm the filling slightly or serve immediately for a creamier texture.
Serving Suggestions
Serve on a chilled platter, garnished with mint leaves or powdered sugar.
Make ahead by prepping strawberries and storing filling separately, then assemble just before serving.
Tips
Make it chocolate cheesecake by adding 1 tbsp cocoa powder to the filling.
Use mascarpone instead of cream cheese for an Italian twist.
Want a firmer filling? Add 1–2 tbsp instant pudding mix to stabilize.
