Cheesy Baked Zucchini with Herbs

Ingredients:

1 zucchini
1 teaspoon salt
2 teaspoons paprika
1 teaspoon black pepper
100 ml olive oil
2 cloves garlic, minced
200 grams mozzarella cheese, shredded
1 tablespoon sour cream
1 tablespoon mayonnaise
A bunch of parsley, chopped
Chives, chopped, for garnish

Instructions:

Prepare the Zucchini:
Preheat Oven:
Preheat your oven to 180°C (356°F).

Season the Zucchini:
Slice the zucchini into rounds or lengthwise strips.
Place the zucchini in a baking dish.
Sprinkle with salt, paprika, and black pepper.
Drizzle with olive oil and add the minced garlic. Toss to coat evenly.

Bake the Zucchini:
First Bake:
Place the baking dish in the preheated oven.
Bake for 10 minutes.
Prepare the Cheese Topping:

Mix Ingredients:
In a small bowl, combine the shredded mozzarella cheese, sour cream, and mayonnaise.
Mix until well combined.

Finish Baking:
Add Cheese Topping:
Remove the zucchini from the oven.
Spread the cheese mixture evenly over the baked zucchini.
Sprinkle with chopped parsley.

Final Bake:
Return the baking dish to the oven.
Bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve:
Garnish and Serve:
Remove from the oven and let cool slightly.
Garnish with chopped chives.
Serve warm and enjoy!
