Ingredients
Regarding the vegetables:
- Two cups of florets of broccoli
- Two cups of florets of cauliflower
- One tablespoon of olive oil
- To taste, add salt and pepper.
Regarding the Cheese Sauce:
- Two tablespoons of butter without salt
- Two teaspoons of flour for all purposes
- 1 1/2 cups of milk, either whole or 2%
- One teaspoon of optional Dijon mustard
- Half a teaspoon of powdered garlic
- Half a teaspoon of onion powder
- 1 1/2 cups of your preferred cheese, such as shredded cheddar
- Half a cup of Parmesan cheese, grated
- To taste, add salt and pepper.
Regarding the topping:
- Half a cup of bread crumbs (panko is good for added crunch)
- One tablespoon of melted butter
- 1/4 cup of Parmesan cheese, grated
- Chopped fresh parsley (optional garnish)
Directions
Warm up the oven:
- Set the oven temperature to 175°C (350°F).
Get the vegetables ready:
Blanch the cauliflower florets and broccoli for 3–4 minutes, or until they are just beginning to soften, in a large saucepan of boiling salted water. To end cooking, drain and rinse with cold water. Put aside.
Prepare the cheese sauce:
- Melt the butter in a medium saucepan over medium heat. To make a roux, add the flour and whisk constantly for approximately one minute.
- Add the milk gradually while whisking continuously until the mixture thickens, which should take three to five minutes.
- Add the shredded cheddar cheese, Dijon mustard, onion powder, and garlic powder and stir. Stir until the sauce is smooth and the cheese has melted. To taste, add salt and pepper.
Mix the sauce and vegetables together:
- Add the cheese sauce and the blanched cauliflower and broccoli to a large mixing bowl. Mix until the veggies are well distributed.
Get the topping ready:
- Combine the breadcrumbs, grated Parmesan cheese, and melted butter in a small bowl.
Put the Gratin Together:
- Fill a 9 x 13-inch baking dish with the broccoli and cauliflower mixture once it has been oiled. Sprinkle the breadcrumb mixture over it evenly.
Bake:
- Bake for 25 to 30 minutes in a preheated oven, or until the top is bubbling and brown.
Serve:
- Before serving, take it out of the oven and allow it to cool somewhat. If desired, garnish with fresh parsley.
