Cheesy Chicken Fritterse

These chicken patties have a juicy centre and crispy, cheesy edges that you will enjoy. You won’t be able to stop at just one because they’re so good cold or room temperature. If you’re fortunate enough to have leftovers, reheating them on a skillet is a great idea.

Ingredients for Fritters with Chicken:

  1. 3 large, 1 1/2 pound chicken breasts
  2. Two big eggs
  3. one-third cup of mayonnaise
  4. 1/3 cup all-purpose flour, or, for a gluten-free option, cornflour or potato starch
  5. 1/4 cup shredded mozzarella cheese, or 4 ounces
  6. 1/2 tablespoon freshly chopped dill
  7. To taste, add 1/2 tsp salt.
  8. 1/8 teaspoon ground pepper
  9. Two tablespoons of extra light olive oil (or any high-heat cooking oil) for sautéing
  10. Garlic Aioli Dip Ingredients (Optional)
    one-third cup of mayonnaise
  11. One squeezed clove of garlic
  12. A half-tsp of lemon juice
  13. 1/8 tsp black pepper and 1/4 tsp salt

Instructions:

  1. Dice the chicken into 1/3-inch thick pieces with a sharp knife, then transfer the pieces to a large mixing bowl. A partially frozen chicken breast will make slicing it slightly simpler.
  2. Add the remaining ingredients for the batter into the mixing bowl: Add 1 1/2 Tbsp dill, 1/2 tsp salt, 1/8 tsp black pepper, 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, and 1 1/3 cups shredded mozzarella, or season to taste. After thoroughly mixing the ingredients, cover the dish with plastic wrap, and chill it for two or three hours.
  3. Add two tablespoons of oil to a big nonstick pan and heat it over medium heat. One generous Tablespoon of the chicken mixture at a time, once the oil is hot. Using the back of a spoon, slightly flatten the tops, then cook uncovered for 3–4 minutes on the first side, 3 minutes on the second, or until the chicken is thoroughly cooked and the outsides are golden brown. Continue cooking the leftover fritters, using extra oil as necessary.
  4. In a small bowl or measuring cup, combine all the ingredients for the aioli (if using) and stir until smooth.
  5. Slice a fritter in half to check the doneness of the chicken; it should be entirely white inside. Reduce the heat if your chicken patty is browning too quickly.
