- – 1/4 cup grated Parmesan cheese
- – 2 cups bread cubes (from removed crusts)
- – 1 cup chicken broth
- – 1 celery stalk, finely diced
- – 1/4 cup onion, finely diced
- – 1 egg, beaten
- – 1/2 cup shredded mozzarella cheese
- – 1 tablespoon fresh parsley, chopped
- – 1/2 teaspoon salt
- – 1/4 teaspoon black pepper
- – Fresh parsley, chopped
- – Additional Parmesan cheese
- – Thinly sliced celery leaves
Directions:
1. Get the bread cups ready:
Set the oven’s temperature to 375°F (190°C).
Using a rolling pin, flatten each slice of bread; combine melted butter, minced garlic, and Italian seasoning; brush bread on both sides with garlic butter; press into muffin tin cups; and top with Parmesan cheese.
2. Prepare the filling.
Slice the bread crusts into small cubes; add the chicken stock and let them soak; stir in the mozzarella and beaten egg; add the parsley, salt, and pepper; and combine thoroughly.
3. Put together and bake:
Stuff the stuffing mixture into each bread cup, being careful not to pack too firmly to prevent expansion.
Top with additional cheese and bake for 20 to 25 minutes, or until golden brown.
4. Complete and serve: – Allow to cool in the pan for 5 minutes – Add celery leaves and fresh parsley as garnish – Serve while still crispy and warm.
5. Storage advice: Reheat in the oven at 350°F for 5 to 7 minutes to crisp; keep in the refrigerator for up to 2 days; and enjoy fresh out of the oven.
