Cheesy Mashed Potato Puffs
These are a great way to use up leftover mashed potatoes since they are crispy on the outside and fluffy and cheesy on the inside
Ingredients
- Two cups of freshly prepared or leftover mashed potatoes
- One cup of cheddar cheese, shredded
- 1/4 cup of Parmesan cheese, grated
- Two huge eggs
- 1/4 cup of milk
- Two chopped green onions
- To taste, add salt and pepper.
- Half a teaspoon of powdered garlic
- Half a teaspoon of optional smoked paprika
Directions
1. Warm up the oven:
Lightly oil a muffin tray and preheat the oven to 400°F (200°C).
2. Combine Ingredients: Put mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, smoky paprika, garlic powder, salt, and pepper in a big bowl. Mix thoroughly until creamy and smooth.
3. Fill Muffin Tin: Using a spoon, fill each muffin tin cup approximately three-quarters of the way to the top with the potato mixture.
4. Bake: Bake the puffs for 20 to 25 minutes, or until the tops are brown.
5. Serve Warm: Before taking them out of the muffin tray, let them cool somewhat. Enjoy the cheesy, fluffy bliss while it’s still warm!
