Cheesy Mashed Potato Puffs
These are a great way to use up leftover mashed potatoes since they are crispy on the outside and fluffy and cheesy on the inside
Ingredients
Two cups of freshly prepared or leftover mashed potatoes
One cup of cheddar cheese, shredded
1/4 cup of Parmesan cheese, grated
Two huge eggs
1/4 cup of milk
Two chopped green onions
To taste, add salt and pepper.
Half a teaspoon of powdered garlic
Half a teaspoon of optional smoked paprika
Directions
Warm up the oven:
Lightly oil a muffin tray and preheat the oven to 400°F (200°C).
Combine Ingredients: Put mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, smoky paprika, garlic powder, salt, and pepper in a big bowl. Mix thoroughly until creamy and smooth.
Fill Muffin Tin: Using a spoon, fill each muffin tin cup approximately three-quarters of the way to the top with the potato mixture.
Bake: Bake the puffs for 20 to 25 minutes, or until the tops are brown.
Serve Warm: Before taking them out of the muffin tray, let them cool somewhat. Enjoy the cheesy, fluffy bliss while it’s still warm!
