Cheesy Pizza Muffins recipe

Ingredients:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
½ tsp salt
½ tsp dried oregano
½ tsp garlic powder
¾ cup milk
1 egg
2 tbsp olive oil
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ cup mini pepperoni slices or diced pepperoni
⅓ cup marinara sauce (for topping or dipping)
2 tbsp chopped fresh basil (optional)
Instructions:
1. prepare the batter
preheat oven to 375°F (190°C) and line a muffin tin with liners.
in a large bowl, whisk together flour, baking powder, salt, oregano, and garlic powder.
2. mix the wet ingredients
in another bowl, whisk milk, egg, and olive oil until combined.
gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
3. add the fillings
fold in mozzarella, Parmesan, and pepperoni.
spoon the batter into the muffin tin, filling each cup about ¾ full.
4. bake and serve
bake for 18-20 minutes or until the tops are golden and firm.
let cool for a few minutes before serving with marinara sauce.
sprinkle with fresh basil if desired.
