Cheesy Potato and Green Pea Tortilla Bake

Ingredients

  • 2 large potatoes
  • Water (enough to boil the potatoes)
  • 2-3 green onion stalks, chopped
  • Salt (to taste)
  • 1/2 cup frozen green peas (75g)
  • 100g mozzarella, shredded (3.5 oz)
  • 2 large tortillas
  • Black pepper (to taste)
  • 50g Parmesan  cheese, grated (1.75 oz)
  • Additional 100g mozzarella, shredded (3.5 oz)

Instructions

1. Prepare the Potatoes:

  1. Peel and Cut:
    • Peel and cut the potatoes into chunks.
  2. Boil:
    • Place the  potato chunks in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  3. Drain and Mash:
    • Drain the cooked potatoes and mash them until smooth.

2. Prepare the Filling:

  1. Combine Ingredients:
    • In a large mixing bowl, combine the mashed potatoes, frozen green peas, chopped green onions, and 100g of shredded mozzarella.
  2. Season:
    • Season with salt and black pepper to taste. Mix well until all ingredients are evenly incorporated.

3. Assemble the Tortilla Bake:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (360°F).
  2. Layer the Tortilla:
    • Place one tortilla on a baking sheet lined with parchment paper.
  3. Add Filling:
    • Spread the  potato mixture evenly over the tortilla.
  4. Top with Second Tortilla:
    • Cover with the second tortilla.
  5. Add  Cheese Topping:
    • Sprinkle the top with additional mozzarella and grated Parmesan  cheese.

4. Bake:

  1. Bake:
    • Bake in the preheated oven for about 20 minutes, or until the  cheese is melted and golden brown.

5. Serve:

  1. Cool and Slice:
    • Let the tortilla bake cool slightly before slicing it into wedges. Serve warm.
