Cheesy Potato and Green Pea Tortilla Bake
Ingredients
- 2 large potatoes
- Water (enough to boil the potatoes)
- 2-3 green onion stalks, chopped
- Salt (to taste)
- 1/2 cup frozen green peas (75g)
- 100g mozzarella, shredded (3.5 oz)
- 2 large tortillas
- Black pepper (to taste)
- 50g Parmesan cheese, grated (1.75 oz)
- Additional 100g mozzarella, shredded (3.5 oz)
Instructions
1. Prepare the Potatoes:
- Peel and Cut:
- Peel and cut the potatoes into chunks.
- Boil:
- Place the potato chunks in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
- Drain and Mash:
- Drain the cooked potatoes and mash them until smooth.
2. Prepare the Filling:
- Combine Ingredients:
- In a large mixing bowl, combine the mashed potatoes, frozen green peas, chopped green onions, and 100g of shredded mozzarella.
- Season:
- Season with salt and black pepper to taste. Mix well until all ingredients are evenly incorporated.
3. Assemble the Tortilla Bake:
- Preheat the Oven:
- Preheat your oven to 180°C (360°F).
- Layer the Tortilla:
- Place one tortilla on a baking sheet lined with parchment paper.
- Add Filling:
- Spread the potato mixture evenly over the tortilla.
- Top with Second Tortilla:
- Cover with the second tortilla.
- Add Cheese Topping:
- Sprinkle the top with additional mozzarella and grated Parmesan cheese.
4. Bake:
- Bake:
- Bake in the preheated oven for about 20 minutes, or until the cheese is melted and golden brown.
5. Serve:
- Cool and Slice:
- Let the tortilla bake cool slightly before slicing it into wedges. Serve warm.
