Cheesy Potato Puffs
Ingredients
Regarding the Potato Blend:
- About four medium potatoes, or two cups of mashed potatoes
- One cup of shredded cheese, either mozzarella, cheddar, or a combination
- 1/4 cup of Parmesan cheese, grated
- 1/4 cup chopped chives or green onions (optional)
- One huge egg
- One teaspoon of powdered garlic
- One teaspoon of powdered onion
- To taste, add salt and pepper.
Regarding the Coating:
- One cup of all-purpose flour
- Two huge eggs that have been beaten
- One cup of normal or panko breadcrumbs
Regarding Frying:
- Canola or vegetable oil for frying
Directions
Get the potatoes mashed:
- Peel and chop the potatoes into chunks if you don’t already have mashed potatoes ready. Boil for 15 to 20 minutes in salted water until tender. Mash until smooth after draining. Allow to cool a little.
Prepare the potato mixture.
- Mash potatoes, Parmesan cheese, shredded cheese, chopped green onions or chives (if used), egg, onion powder, garlic powder, salt, and pepper should all be combined in a large mixing basin. Stir until thoroughly blended.
Shape the puffs of potato:
- About 1 spoonful of the potato mixture should be scooped out and formed into an oval or tiny ball. Continue using the leftover mixture.
Get ready to coat:
- Three shallow bowls should be set up at the breading station: one for flour, one for beaten eggs, and one for breadcrumbs.
Coat the puffs of potato:
- Shake out any extra flour after rolling each potato puff in it.
- Make sure it is completely coated by dipping it into the beaten eggs.
- Lastly, coat them with the breadcrumbs by rolling them in. Transfer the coated potato puffs to a dish or baking sheet.
Fry the puffs of potato:
- In a saucepan or deep fryer, heat 2 inches of oil to 350°F (175°C).
- A few potato puffs should be carefully dropped into the hot oil, being careful not to pack the pan too full. Fry for 3–4 minutes, or until golden brown on all sides.
- Drain the puffs on paper towels after removing them with a slotted spoon.
