Cheesy Spinach and Bacon Flatbread Pizza

Ingredients:

Topping Mixture:

    • 2 strips thick bacon
    • 1 cup baby spinach leaves

    • Salt and pepper, to taste

Assembly:

    • 1 flour tortilla (9-inch) or any flatbread
    • ½ cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • 1 tsp extra virgin olive oil

Directions:

    1. Prepare the Topping Mixture:
        • Cook the bacon in the microwave or your preferred method until it’s almost fully cooked but still soft. Let it drain on paper towels and then cut it into bite-sized pieces.

      • Thinly slice the sweet onion and pack the spinach leaves into a measuring cup.
      • In a bowl, combine the bacon pieces, spinach leaves, onion slices, garlic powder, olive oil, salt, and pepper. Toss to evenly coat and distribute all the ingredients.
    1. Assemble the Flatbread Pizza:
        • Remove the rack from the toaster oven and preheat it to 420°F (215°C). Line the rack with parchment paper and place the tortilla on it.
        • Brush the tortilla with olive oil, leaving a small border around the edge.
        • Evenly spread the shredded mozzarella cheese over the tortilla. Then, add the topping mixture on top of the cheese. Finish by sprinkling the shredded parmesan cheese on top. If desired, make a well in the center of the toppings and crack an egg into it for added richness.

    2. Bake:
      • Place the rack in the middle or lower slot of the toaster oven. Bake at 420°F (215°C) for about 10 minutes or until the cheese is melted and the edges of the tortilla are golden brown.
