Chicken and fried cabbage

Ingredients

  1. One medium head of chopped cabbage
  2. Four to six chicken slices, diced
  3. One sliced onion (optional)
  4. Two to three minced garlic cloves (optional)
  5. To taste, add salt and pepper.
  6. One tablespoon of optional olive oil
  7. Flakes of red pepper (optional for heat)

Directions

  • Cook the chicken: Cook the diced chicken in a big skillet over medium heat until it’s crispy. Keep the chicken drippings in the pan and remove the chicken to set aside.
  • Add the sliced onion to the skillet and cook it in the chicken oil until it becomes tender, if using.
  • Add Cabbage: Fill the skillet with the chopped cabbage. Add a small amount of olive oil to aid in cooking if necessary. Coat with chicken grease by giving it a good stir.
  • Cook Until Tender: Cook the cabbage, turning periodically, for ten to fifteen minutes, or until it is soft and beginning to caramelize.
  • Add Garlic: To avoid burning, add the garlic in the final few minutes of cooking.
  • Add the cooked chicken and, if you’d like, season with salt, pepper, and red pepper flakes.
  • Serve: Savor it warm as an accompaniment!
