Chicken and fried cabbage
Ingredients
- One medium head of chopped cabbage
- Four to six chicken slices, diced
- One sliced onion (optional)
- Two to three minced garlic cloves (optional)
- To taste, add salt and pepper.
- One tablespoon of optional olive oil
- Flakes of red pepper (optional for heat)
Directions
- Cook the chicken: Cook the diced chicken in a big skillet over medium heat until it’s crispy. Keep the chicken drippings in the pan and remove the chicken to set aside.
- Add the sliced onion to the skillet and cook it in the chicken oil until it becomes tender, if using.
- Add Cabbage: Fill the skillet with the chopped cabbage. Add a small amount of olive oil to aid in cooking if necessary. Coat with chicken grease by giving it a good stir.
- Cook Until Tender: Cook the cabbage, turning periodically, for ten to fifteen minutes, or until it is soft and beginning to caramelize.
- Add Garlic: To avoid burning, add the garlic in the final few minutes of cooking.
- Add the cooked chicken and, if you’d like, season with salt, pepper, and red pepper flakes.
- Serve: Savor it warm as an accompaniment!
