Chicken Avocado Ranch Burritos – fresh, flavorful, and satisfying
Ingredients:
- 2 cups cooked shredded chicken
- 1 avocado, diced
- 1/4 cup ranch dressing
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper, to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup shredded Feta cheese
Sour cream, for serving - Salsa, for serving
Directions:
Prepare the Filling:
In a large bowl, combine the cooked shredded chicken, diced avocado, ranch dressing, diced tomatoes, red onion, chopped cilantro, and lime juice. Mix well, and season with salt and pepper to taste.
Assemble the Burritos:
Lay a large flour tortilla flat on a clean surface. Spoon some of the chicken and avocado mixture onto the center of the tortilla. Top with shredded lettuce and shredded Feta cheese.
Wrap the Burrito:
Fold in the sides of the tortilla and roll it up tightly to enclose the filling.
