Chicken Fritters
Ingredients
Regarding the Fritters:
- Two cups of cooked chicken (rotisserie chicken is excellent) that has been sliced or diced
- Half a cup of all-purpose flour
- Half a cup of breadcrumbs (for added crunch, use panko)
- 1/4 cup of finely chopped green onions
- 1/4 cup of finely chopped bell pepper (optional)
- 1/4 cup of optionally grated Parmesan cheese
- Two huge eggs
- One teaspoon of powdered garlic
- One teaspoon of powdered onion
- Half a teaspoon of salt
- Half a teaspoon of black pepper
- Half a teaspoon of optional paprika
- One teaspoon of dried parsley or one tablespoon of freshly chopped parsley
Regarding Frying:
- Oil made from vegetables (for frying)
Directions
Get the mixture ready:
- Combine the cooked chicken, flour, breadcrumbs, eggs, garlic powder, onion powder, salt, black pepper, paprika, parsley, green onions, bell pepper (if used), and Parmesan cheese (if using) in a large bowl. Stir until thoroughly blended. You can add a little more egg or a splash of milk if the mixture is too dry. Otherwise, it should stick together.
Create the Fritters:
- Shape the ingredients into tiny patties (approximately 2-3 inches in diameter) with your hands or a spoon. Put them on a baking sheet or platter.
Warm up the oil:
- Heat 1/4 inch of vegetable oil in a large skillet over medium heat. A tiny piece of the fritter mixture should sizzle when dropped into the oil to indicate that it is hot enough.
Cook the Fritters:
- Avoid packing the pan too full when you carefully add a few fritters to the heated oil. Fry until golden brown and crispy, about 3–4 minutes per side.
- After taking the fritters out of the skillet, place them on paper towels to drain. If necessary, add extra oil to the pan and repeat with the remaining fritters.
Serve:
- Enjoy the warm chicken fritters with your preferred dipping sauce, such ranch, honey mustard, or a hot aioli!
Advice
- Dipping Sauce: For a little spiciness, you can serve with hot sauce or make a basic dipping sauce by combining mayonnaise with lemon juice and herbs.
- Storage: You may keep leftover fritters in the fridge for up to three days in an airtight container. To maintain crispness, reheat in the oven.
- Freezing: Uncooked fritters can be frozen. Transfer them to a freezer bag after placing them in a single layer on a baking sheet until they are solid. When you’re ready to eat them, fry them from frozen.
