Chicken Patties with Mozzarella:
Ingredients:
– 500g boneless, skinless chicken breast or thighs, finely chopped
– 1/2 cup panko breadcrumbs
– 1/4 cup grated Feta cheese
– 1 egg, lightly beaten
– 1/4 cup chopped fresh parsley
– 2 cloves garlic, minced
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon paprika
– 4 slices of mozzarella cheese
– Olive oil for brushing
– Fresh basil leaves for garnish
Instructions:
1. Prepare the chicken mixture: In a large bowl, combine the chopped chicken, breadcrumbs, Feta cheese, egg, parsley, garlic, salt, pepper, and paprika. Mix well with your hands or a wooden spoon until just combined. Be careful not to overmix.
2. Divide the mixture: Divide the chicken mixture into 4 equal portions and shape each portion into a ball. Flatten each ball slightly into a patty shape.
3. Brush with olive oil: Brush both sides of each patty with olive oil.
4. Grill or pan-fry the patties: Preheat a non-stick skillet or grill over medium-high heat. Cook the patties for 5-6 minutes per side, or until they’re cooked through and golden brown.
5. Assemble the patties with mozzarella: Once the patties are cooked, place a slice of mozzarella cheese on top of each patty.
6. Melt the mozzarella: Place the patties under the broiler for 1-2 minutes, or until the mozzarella cheese is melted and bubbly.
7. Serve and garnish: Serve the chicken patties hot, garnished with fresh basil leaves and your favorite sides, such as a green salad, roasted vegetables, or a crusty bread roll.
