Chicken with Garlic Butter and Lemon Parmesan Pasta
This is a tasty and filling recipe that combines creamy lemon parmesan pasta with juicy, succulent garlic butter chicken. It’s full of flavors that everyone will like, making it ideal for a filling supper. To make it, follow these steps:
Ingredients
For the Chicken with Garlic Butter:
- Four skinless, boneless chicken thighs or breasts
- Two tablespoons of olive oil
- 4 tablespoons of divided butter
- Four minced garlic cloves
- One tablespoon of dried or fresh thyme
- One teaspoon of dried oregano
- To taste, add salt and pepper.
- One lemon’s juice
- Chopped fresh parsley (for garnish)
Regarding the Pasta with Lemon Parmesan:
- 8 ounces (225 grams) of pasta, like penne, fettuccine, or spaghetti
- Two tablespoons of butter
- One cup of heavy cream
- Half a cup of Parmesan cheese, grated
- One lemon’s zest
- Half a lemon’s juice
- A half-tsp of garlic powder
- To taste, add salt and pepper.
- Chopped fresh parsley (for garnish)
Directions:
1. Prepare the chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Sprinkle the chicken breasts on both sides with oregano, thyme, salt, and pepper.
- The chicken breasts should be added to the heated pan and cooked for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C), and the chicken is golden brown and cooked through.
- After taking the chicken out of the skillet, place it on a plate to rest.
2. Prepare the Butter Sauce with Garlic:
- Add two tablespoons of butter to the same skillet and lower the heat to medium.
Add the minced garlic and cook until fragrant, about 1 minute. - Scrape up any browned bits from the bottom of the pan and add the lemon juice.
- Melt the remaining 2 tablespoons of butter after stirring it in. After the butter has melted, put the chicken back in the skillet, cover it with a little of the sauce, and cook it for two to three more minutes.
- While you make the pasta, keep the chicken warm and garnish it with fresh parsley.
3. Prepare the Pasta with Lemon Parmesan:
- Bring a big saucepan of salted water to a boil while the chicken cooks. As directed on the package, add the pasta and cook it. Set aside approximately half a cup of pasta water after draining the noodles.
- Melt the two tablespoons of butter in a another large skillet over medium heat.
Stir in the garlic powder, lemon zest, lemon juice, and heavy cream. Bring to a slow simmer, stirring. - Add the grated Parmesan cheese and whisk until the cream is thoroughly heated. Simmer for a further three to five minutes, or until the sauce has thickened.
- Gently toss the cooked pasta in the sauce to coat it. Use some of the pasta water you set aside to thin out the sauce if it’s too thick. To taste, add salt and pepper.
4. Offer:
- Serve the creamy lemon parmesan pasta with the garlic butter chicken.
- For extra taste, garnish with Parmesan cheese and more parsley.
