Chocolate Fudge Layered Cake

Ingredients:
For the Cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
For the Fudge Filling:
1 cup heavy cream
8 oz semi-sweet chocolate, chopped
2 tbsp unsalted butter
1 tsp vanilla extract
For the Chocolate Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/4 cup heavy cream (or more as needed)
1 tsp vanilla extract
A pinch of salt
Instructions:
1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, oil, and vanilla extract. Mix on medium speed until smooth.
Gradually add the boiling water, mixing until fully combined (the batter will be thin).
Divide the batter evenly between the two prepared cake pans.
Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
2. Make the Fudge Filling:
In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer (but not boil).
Remove from heat and add the chopped chocolate and butter. Stir until smooth.
Stir in the vanilla extract. Let it cool to room temperature, then refrigerate for 30-45 minutes until it firms up a bit (it should still be spreadable).
3. Make the Chocolate Frosting:
In a large bowl, beat the softened butter until creamy.
Gradually add the powdered sugar and cocoa powder, mixing until smooth.
Add the heavy cream, vanilla extract, and a pinch of salt. Beat until the frosting is light and fluffy, adding more cream if needed to reach your desired consistency.
4. Assemble the Cake:
Place one layer of the cake on a serving platter.
Spread a layer of fudge filling over the first cake layer.
Place the second cake layer on top and gently press down.
Frost the entire cake with the chocolate frosting, smoothing it out with a spatula.
You can add extra fudge filling on top or around the edges for a more decadent look.
