Chop Suey
Get ready to indulge in the savory and satisfying flavors of our Chop Suey! This classic Chinese-American dish combines the tender crunch of vegetables, the savory flavor of meat or tofu, and the comforting warmth of a rich sauce, all served over a bed of steaming hot rice.
Ingredients:
- 2 tablespoons Olive oil
- 2 cloves garlic, minced
- 1 cup chicken, sliced into thin strips
- 1 cup shrimp
- 3-4 tablespoons oyster sauce
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 medium carrot, sliced diagonally
- 1 cup sugar snap peas or snow peas
- 1 small bell pepper, cut into diagonal cubes
- 1 bunch pak choi, cut into smaller pieces
- 1 medium red onion, quartered
- 3-4 mushrooms, each sliced into 3-4 pieces
- 5 young corn, each cut diagonally into 2
- 2 tablespoons cornstarch dissolved in 1 cup water
- ¼ teaspoon ground pepper
- Salt to taste
Instructions:
Prepare the ingredients: Slice the chicken into thin strips. If using shrimp, peel and devein them. Prepare the vegetables (cauliflower, broccoli, carrots, bell pepper, pak choi, red onion, mushrooms, and young corn) as described in the ingredients list.
Cook the protein: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the pork or chicken slices and stir-fry until browned and cooked through. Add the shrimp and cook until they turn pink. Remove the cooked meat and shrimp from the pan and set aside.
Stir-fry the vegetables: In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the garlic and sauté until fragrant. Then, add the cauliflower, broccoli, carrot, sugar snap peas, bell pepper, pak choi, red onion, mushrooms, and young corn. Stir-fry the vegetables for 3-4 minutes, or until they are slightly tender but still crisp.
Combine with the sauce: Return the cooked pork or chicken and shrimp to the pan with the vegetables. Add the oyster sauce and stir to coat everything evenly.
Make the sauce: In a small bowl, mix the cornstarch with 1 cup of water and stir until dissolved. Pour this cornstarch mixture into the pan with the vegetables and meat. Stir everything together and cook for another 1-2 minutes, or until the sauce thickens.
Season: Add ground pepper and salt to taste. Adjust the seasoning as needed.
Serve: Once the sauce has thickened and everything is well coated, remove from heat. Serve hot with steamed rice or noodles.
