- 150 g (3/4 cup) brown sugar
- 5 g (1 + 1/4 tsp) baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon powder
- 2 apples (250 g total), peeled, cored, and shredded
- Some lemon juice, to drizzle on shredded apples
- 90 g (1/2 cup) vegetable oil
- 2 eggs, room temperature
- 1 tsp vanilla extract
For the Topping:
- 15 g (1 tbsp) granulated white sugar
- 1/4 tsp cinnamon powder
For the Glaze:
- 35 g (4 tbsp) powdered sugar
- Few drops of water, for the glaze
Steps to Make It
Step 1: Prepare the Apples
- Peel, core, and shred the apples using a box grater.
- Drizzle the shredded apples with a bit of lemon juice to prevent browning and set aside.
Step 2: Preheat and Prep
- Preheat your oven to 180°C (350°F).
- Grease a loaf pan and line it with parchment paper for easy removal.
Step 3: Prepare the Milk Mixture
- If using regular milk, combine it with vinegar or lemon juice and let it sit for 5-10 minutes to create a buttermilk substitute. Skip this step if using buttermilk.
Step 4: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and cinnamon powder until well combined.
Step 5: Mix the Wet Ingredients
- In a separate bowl, whisk the eggs, vegetable oil, vanilla extract, and the prepared milk (or buttermilk).
Step 6: Combine the Mixtures
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Avoid overmixing to ensure a tender loaf.
- Fold in the shredded apples gently to distribute them evenly throughout the batter.
Step 7: Add the Topping
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Mix the granulated sugar and cinnamon for the topping and sprinkle it evenly over the batter.
Step 8: Bake the Bread
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Step 9: Add the Glaze
- Once the bread is cool, prepare the glaze by mixing the powdered sugar with a few drops of water until smooth.
- Drizzle the glaze over the bread and let it set before slicing and serving.
