Ingredients

  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup brown sugar
  • 1 ½ cups milk
  • 2 eggs
  • ¼ cup vegetable oil
  • 2 teaspoons vanilla extract
  • ¼ cup unsalted butter, melted
  • 2 tablespoons ground cinnamon
  • 1 tablespoon baking powder

 

Directions:

  1. Heat an oven to 350 F (175 C). Grease a 9×5 inch loaf pan.
  2. Blend the flour, white sugar, baking powder and salt in a large bowl.
  3. In another mixing bowl combine milk, eggs, vegetable oil and vanilla until smooth.
  4. Add the wet ingredients into the dry ones and mix until just damp.. Do not overmix.
  5. Take melted butter, mix with brown sugar and cinnamon in a small bowl to make the cinnamon swirl.
  6. Pour half of the batter into the greased loaf tin.. In turn sprinkle half of cinnamon swirl mixture over the batter. Repeat process using remaining batter and cinnamon swirl mixture.
  7. Gently cut through batter with knife for marbling effect.
  8. Bake for 45-50 minutes or until toothpick inserted near center comes out clean.
  9. It is essential to let the bread cool in the dish for ten minutes before shifting it on a wire rack and leaving it until it becomes cool.

Serving and Storage Tips:

For a more lavish touch, serve warm slices of cinnamon bread with a bit of butter. Keep them covered in an air tight container at room temperature not exceeding three days.

  1. Making sure that you do not over-mix will make tenderized batter.
