Introduction
Classic Meatloaf is a nostalgic, hearty dish that feels like home. Juicy ground beef seasoned with simple pantry spices is baked to perfection, then topped with a rich, sweet glaze that caramelizes beautifully in the oven. This recipe is straightforward, family-friendly, and perfect for weeknight dinners or Sunday meals. The timing is carefully laid out so you can plan it with ease.
Total Time: ~1 hour 20 minutes (mostly hands-off)
Servings: 6–8 slices
Ingredients
For the Meatloaf:
2 lbs ground beef (80/20 works best for moisture)
1 cup breadcrumbs (plain or Italian seasoned)
2 large eggs
1 medium onion, finely diced (or 1 tsp onion powder if preferred)
3 garlic cloves, minced (or 1 tsp garlic powder)
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 ½ tsp salt
1 tsp black pepper
1 tsp dried thyme (or Italian seasoning)
For the Sweet Glaze:
½ cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar (or white vinegar)
1 tsp Dijon mustard (optional, for tang)
Step-by-Step Instructions with Timing
Prep Time: 15 minutes
Preheat oven to 375°F (190°C).
Lightly grease a 9×5 loaf pan or line a baking sheet with parchment paper.
In a large mixing bowl, combine breadcrumbs and milk; let sit for 2–3 minutes to soften.
Add ground beef, eggs, onion, garlic, ketchup, Worcestershire, salt, pepper, and thyme. Mix until just combined (don’t overmix or meatloaf will be dense).
Shape mixture into a loaf (either in loaf pan or free-form on baking sheet).
Cooking Time: 55–65 minutes
In a small bowl, whisk together all glaze ingredients.
Spread half of the glaze evenly over the top of the meatloaf.
Bake for 40 minutes.
Remove from oven, spread the remaining glaze on top, and return to bake for another 15–25 minutes, or until the internal temperature reaches 160°F (71°C).
Resting Time: 10 minutes
Remove from oven and let the meatloaf rest for 10 minutes before slicing. This helps it hold together and stay juicy.
